Fresh Raw Oysters with Red Caviar

An elegant appetizer that you can pair wonderfully with a crisp, chilled glass of Champagne, a light beer or a sparkling wine which complements the brininess of the oysters and caviar. Ingredients:
  • 12 fresh oysters, shucked and on the half shell
  • 2 tablespoons fresh Salmon caviar 
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon finely chopped chives
  • Cracked black pepper, to taste
  • Crushed ice or rock salt
Preparations:
  1. Prepare the Oysters: Arrange the shucked oysters on a platter, setting them on a bed of crushed ice or rock salt to keep them chilled and steady.
  2. Add the Salmon Caviar: Carefully place a small spoonful of fresh salmon caviar on top of each oyster. The delicate, salty pop of the caviar pairs perfectly with the briny oyster.
  3. Flavor with Lemon and Chives: Drizzle a few drops of fresh lemon juice over each oyster to enhance the natural flavors, and sprinkle with finely chopped chives for a fresh, aromatic touch.
  4. Finish with Pepper: Lightly crack fresh black pepper over the oysters to taste.
