In the Kitchen: Nana's Oyster Stuffing Recipe

Nana's oyster stuffing has been a family favorite of ours going back several generations. She would make this recipe only on special occasions, primarily Thanksgiving and Christmas. As our family grew, we'd ask Nana for the recipe, which she was reluctant to give up, saying only that it was "made with love." 

Now, our family is proud to offer this recipe to you, to try and home with your own Bayman's Bounty Jarred Oysters.

Ingredients

  • 4 tablespoons of butter
  • 1 cup of chopped white onion
  • 1 cup of chopped celery
  • 3 cups of shucked oysters with the liquor
  • 4 cups of diced day old bread (cut your bread into ½ inch cubes and leave out for a day)
  • 1 cup of chicken broth or seafood broth
  • Salt and fresh ground pepper
  • ½ teaspoon poultry seasoning
  • ¼ teaspoon rubbed sage

 Steps

  1. Preheat oven to 350 F, oil a 9x13 casserole dish
  2.  In a large pan over medium heat add butter, onion and celery. 
  3. Cook for 4 minutes.  Lower heat.  Add in bread cubes, oysters with liquor, and broth.  Mix well. 
  4. Add, poultry seasoning and rubbed sage and mix.  Season to taste with salt and pepper.
  5.  Pour stuffing into baking dish, cover with foil. 
  6. Bake for 30 minutes.  Remove foil and bake for 20 minutes or until golden brown on top.
