  • Fresh oysters (as many as desired)
  • 1/2 cup red wine vinegar
  • 2 tablespoons shallots, finely minced
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon sugar
  • 1/4 cup fresh parsley, finely chopped (optional, for garnish)
  • Crushed ice (for serving)

1. Prepare the Oysters:
- Scrub the oyster shells under cold running water to remove any dirt or debris.
- Using an oyster knife, carefully shuck the oysters, preserving as much of the oyster liquor (juice) as possible. Discard the top shells, but keep the oysters in the deeper bottom shells.

2. Prepare the Mignonette Sauce:
- In a small bowl, combine the red wine vinegar, minced shallots, freshly ground black pepper, and sugar.
- Stir the mixture well to ensure the sugar dissolves.
- Allow the mignonette sauce to sit for at least 15-20 minutes to let the flavors meld.

3. Assemble the Oyster Mignonette:
- Place the shucked oysters on a bed of crushed ice on a serving platter or individual plates.
- Spoon a small amount of the mignonette sauce over each oyster.

4. Garnish (Optional):
- Sprinkle finely chopped fresh parsley over the oysters for added color and flavor.
