- 24 fresh oysters, on the half shell
- 1 cup fresh spinach, chopped
- 1/2 cup fresh parsley, chopped
- 1/4 cup green onions, chopped
- 1/4 cup celery, finely chopped
- 2 cloves garlic, minced
- 1/2 cup unsalted butter
- 1/2 cup breadcrumbs
- 1/4 cup Pernod or anise-flavored liqueur (optional)
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Rock salt or kosher salt for the baking sheet


1. **Preheat the oven:** Preheat your oven to 450°F (230°C).

2. **Prepare the oysters:** Scrub the oysters to remove any dirt or debris. Shuck the oysters, keeping the deep bottom shell intact. Discard the top shell and place the oysters on a bed of rock salt or kosher salt on a baking sheet to keep them steady.
